Recipe: Easy Feijoada (Portuguese/Brazilian black bean stew)
I first ate this on the Algarve in a little Brazilian restaurant that served the most divine char-grilled meats. As part of the meal, we had at our disposal a salad bar with hot rice and this little number made with black beans, smoked sausage and bacon. Deliciously simple..
Ingredients
2 medium banana shallots sliced
1 clove of garlic finely chopped
A little olive oil
3 small Kabanos sliced thickly
1 tbspn of cubed smoked pancetta
1 medium tomato chopped
Beef stock
Water
1 Carton of cooked Black Beans
Method
Saute the shallot and garlic in the olive oil until softened but not browned. Add the kabanos and bacon and saute for a further 2-3 minutes. Add the rest of the ingredients and make into a stew with beef stock and water. Simmer gently until the shallots are beautifully softened and the sauce has reduced. Serve sprinkled with chopped coriander, alongside steamed rice.
