Recipe: Scrambled Egg
Now. I've been on this planet a long time and had scrambled egg more times than I care to mention, and the quality of this humble dish has been variable to say the least. I've eaten at hundreds of breakfast buffets in Hotels all over the Country where this simple thing has been appallingly crucified.. Crumbly, pale, dry, overcooked and bland, the worst scrambled egg is unpleasant and barely palatable. I need to correct that heinous crime by offering a recipe that is respectful and kind to the Egg. Good scrambled egg needs to be voluptuous, savoury and substantial.. People, I give you the recipe..
Ingredients
2 Large Eggs
A splash of Milk
A pinch of salt
A small knob of Butter
Method
Beat together the Eggs, Milk and Salt in a bowl. Melt the butter in a frying pan over a low heat and add the Beaten Egg mixture. Cook gently, mixing up the Egg and pulling it in towards the centre of the pan until it's mostly cooked. Turn off the heat and gently turn the egg over and over until it is just cooked in the residual heat of the pan, and unifies into a gorgeous yellow mass. If water starts to appear around the egg then throw it in the bin, turn down the heat and start again..
